"Similar to the classic Mayonnaise Cake, but made with creamy salad dressing. This recipe is formulated for cupcakes, and is not suitable for a cake."

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or use paper liners. Sift all-purpose flour, baking soda and cocoa together and set aside.
  2. Whip salad dressing, white sugar, water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Divide batter into prepared muffin pans.
  3. Bake in preheated oven for 15 to 25 minutes.

Sweet Potato Pie    





Many of my Thanksgivings have been spent in Logansport, Louisiana
at my Grandma Neva's and my Grandpa Charles's house. The food is
always good and plentiful, but my favorite dish comes after the turkey and
dressing and all the fixings. I always make sure I get the first piece of my
favorite holiday dish - sweet potato pie.
I am in heaven when I sink my teeth into that first piece of this sweet
and delicious pie. I really just want to take the whole thing and a large
spoon and eat the entire pie all by myself. Sweet potato pie is like a good
friend that you get to see on a special day.
Louisiana is known for its wonderful sweet potatoes, so it just makes
sense that it is the main ingredient in my family's favorite holiday dessert.
Did you know that the sweet potato is even the state vegetable of
Louisiana?
If you want to blow your mind with this golden orange pie just follow
this recipe. I know that your mouth will be watering as you smell this
amazing dessert baking.
1 pie crust
2 eggs
3/4 cup sugar
lean evaporated milk (5 ounces)
3 Tbsp butter (melted)
1 tsp shredded lemon peel
1 dash ground nutmeg
2 medium sweet potatoes (cooked and mashed)
Directions: Preheat oven to 350° F. Prepare pastry and line a pie
plate. In a bowl beat eggs, add sugar, evaporated milk, butter, lemon peel,
and nutmeg. Whisk in sweet potatoes until combined. Pour into crust-lined
pie plate. Cover edges of pastry with foil. Bake for 30 minutes. Remove
foil and bake 20 to 30 more minutes. Let cool. Cover and refrigerate.
Sweet potato pie has been a tradition in my family since before I was
born. I sure hope it continues for many years to come.

fresh Pie cakes

                  
   "Brown Bag" French Apple Pie

----------------------------FOR THE PIE--------------------
1 1/2 c All-Purpose Flour
1/2 ts Salt
1/2 c Shortening
5 tb ICE Water
8 c Apples [peeled & sliced]
1/4 c Granulated Sugar
2 tb All-Purpose Flour
1/2 ts Nutmeg, Ground
2 tb Lemon Juice
1 ts Cinnamon, Ground
------------------------------FOR THE TOPPING------------------------------
1/2 c Granulated Sugar
1/2 c All-Purpose Flour
1/3 c Butter
1 lg Paper Bag
Vanilla Ice Cream
Preheat the oven to 400 degrees.
To make the pie: 1) Combine the first measure of flour, salt and shortening
using a pastry blender until the mixture resembles coarse crumbs, then stir
in the water a little at a time, using a fork, and form the dough into a
ball.
2) Roll out the pastry dough on a lightly floured board. Roll to an 11" or
12" diameter and fit into a 9" pie pan fluting the edges.
3) Combine the sugar, the second measure of flour, the cinnamon, the nutmeg
and the lemon juice in a large bowl then toss the apple slices in the
mixture and arrange them in the pie crust.
To make the topping: 4) Combine the sugar and flour in a bowl and cut in
the butter using a pastry cutter then sprinkle the topping over the apple
filling.
5) Place the pie in the LARGE paper bag and place the paper bag on a baking
sheet and loosely fold the open end of the bag under. Bake until the apples
are tender (50-60 minutes).
6) Carefully remove the pie from the bag ~ CAUTION: WATCH OUT FOR THE STEAM
COMING OUT OF THE BAG!
7) Serve warm with generous portions of vanilla ice cream.

Fresh Fruit Pie

                                                     9Minute Fresh Fruit Pie


INGREDIENTS:

1 (9 inch) prepared graham cracker crust
1 cup white sugar
5 tablespoons cornstarch
1/8 teaspoon salt
1 1/2 cups cold water
1 apple, cored and diced with peel
1 banana, diced
1 (15 ounce) can pineapple tidbits, drained
1/4 cup chopped pecans
1/2 teaspoon red food coloring
1/2 teaspoon fruit preserver
1 1/2 cups nondairy whipped topping

DIRECTIONS:
In a medium saucepan combine sugar, cornstarch and salt. Pour the water into the cornstarch
mixture and stir together over medium heat until it starts to boil. Continue stirring for about one
minute; mixture should be thick and clear in color. Remove from heat and set aside to cool.
Mix together the apple, banana, pineapple and pecans in a medium bowl. Combine fruit with
cooked mixture, adding food coloring and fruit preserver; pour into graham cracker crust. Cover
and refrigerate for about an hour. Serve with whipped topping; garnish with chopped pecans if
desired.
